You can reach the island of Noirmoutier from Strasbourg by train and coach in 5 easy steps:
1) Take a Strasbourg–Nantes train, with a connection in Paris, from Strasbourg station.
2) Transfer between Gare de l’Est and Gare Montparnasse in Paris (depending on your connection time and preferences, you can get there by metro, bike-share, taxi, etc.
